bootable ssd external enclosure advice

I’m a video editor and travel during the week to three different locations. I have been bringing an old laptop with me everyday, but that is too heavy and not fast enough now. So now I’m looking to buy two newer Macs (yes, I’m a Mac user), leave the laptop in the location where I do the least editing, and just carry 2 TBs of SSD storage in an external enclosure(s) (am considering a raid & two separate drives) that I would boot from and use as video storage.

I already own a 1TB Crucial m500 and am thinking of either buying another one or a 1TB Samsung 840 EVO. So, I was wondering:

1- Would a RAID 0 with two SSDS be a good idea? Thought I might benefit from some faster speeds and it would help organize the video footage, etc. Have checked out a couple options like the Wiebetech toughteck Duo 3SR (http://www.wiebetech.com/products/ToughTech-Duo-3SR.php) and the Oyen Digial MiniPro 2-Bay Raid (http://oyendigital.com/hard-drives/store/CB3R-M.html). Both are USB 3, but there are Thunderbolt options available as well like the Lacie Little Big Disk.
2- If I get a RAID 0, should I mix the m500 with the Samsung, or would it be a better idea to get either two m500s or two Samsungs?
3- If RAID 0 is too risky, any advice on two separate enclosures? Oyen has their mini Pro single drive options in USB 3 and Thunderbolt. Am definitely open to other suggestions though!

I really do not recommend RAID 0 because last time I had experience where one hard drive corrupted and data were lost, and then it maps to another hard drive, so basically it causes both copy of data to be corrupted.
