House wiring + FiOS wiring

OK, so I'm refurbing a house, 1800 sq/ft, 2 story.
Wiring throughout with ethernet and coax.

Verizon FiOS. House already had it, intervening residents went with cable and/or Dish (ewww). ONT already there, but may need to be replaced.
Replacing the existing 25year old incredibly crappy coax wiring.

2 ethernet drops to each room, multiple drops in the entertainment area.

House on slab, so no underneath access. Full attic access.

Current concept:
Verizon router to 24 port switch to patch panel to room locations.
2 ports off the Verizon router direct to a couple of locations, due to a couple of devices needing direct access to the router.
A couple of 8 port switches in the necessary locations.

Will be using Cat5e and RG6

This will all be wired and walls sealed long before the FiOS installation.
No single run over 75 feet/25 meters.

Any gotchas I should be aware of?

The phone system is handled by an Ooma, connected directly to the main router and feeding a wireless phone array.

I probably won't need an AP (max overall distance is no more than 40 feet). But if I do, yes, one at the other end of the house.
