Hey, I am wondering on how I should organize my monitors. I basically have these monitors and video cards:
Monitors:
1x HD Monitor (Gaming)
1x Low Resolution Monitor (Email Etc.)

Video Cards:
2x GTX 670 (Sli)
1x GTX 650 (Lieng around)

So where would I plug everything in? Keep in mind I use the HD one for gaming, so I would love all the horse power there. Then maybe I could run the second (Email) monitor off my 650 or something? Thanks!

Hook both monitors into the GTX 670 sli. It helps if you can hook up the HD monitor to DVI port 1, (they're numbered but very small) however it's not necessary. Right click the desktop, Screen resolution. Then right click the second monitor, (which is grayed out) select extend and apply. Then right click the HD monitor and make primary.

So could I do anything with my 650? I think I could dedicaste PhysX, but anything else?

It doesn't really matter. Where you hook up your monitors on you GPU so long as both monitor are on the same 670. What will happen is that windows will start on the smaller monitor, But if you follow my steps the end result is the same.

You can use your 650 for PhyX. But sometimes in games a dedicated PhysX card can slow down a rig if it's too old. While I doubt that the case in your rig, you'll have to test to find out.
