if there the same money and same cpu core type then a 6 core cpu is better in a server the more cores the more code can run per clock cycle. in today server the ib based and the newer haswell servers are not only powerfull there low power too. you also have to look at amd server chips too. depending on what your running amd cpu may run faster per clock then an intel cpu.
