You will not have any slow down due to 3.0 x8, depending on the game and if your CPU doesn't become a bottleneck you can double your fps with a second GPU.

Faster, anything 7970 and lower doesn't utilize all the 3.0 bandwith. 2x 7870 should be just fine.

actually there were benchmarks that even consistently showed those cards were slightly faster at 8x8x vs 16x16x. it's a long explaination why, and irrelevant.
your PSU should be ok, but not my any wide margin.
why buy an unlocked processor and not OC it? crank it up!
