I'm planning on building a new rig for gaming and i'm having issues on deciding what I want to do for my GPU. I don't know which is better using 2 GPU's and crossfire them or keep then separate, I also want to be able to have my display set across 3 monitors. This is my Build, thanks:

CPU: AMD FX-8350 4.00GHz 8-core
CPU Cooler: Cooler Master Hyoer TX3 54.8 CFM Sleeve Bearing
Motherboard: Asus SABERTOOTH 990FX R2.0 ATX AM3+
Memory: [Crucial Ballistix Sport 16gb (2x8gb) DDR3-1600] X 2 Total 32gb
Storage: Sandisk Readycahse 32gb 2.5 SSD (Only for OS Windows 7 ultimate)
-Seagate 2TB 3.5
***Video Card: [Power\Color Radeon HD 7970 3GB] X 2 Total 6gb***
Case: Rosewill Challenger-U3 ATX Mid Tower
Power Supply: CoolMax 800W ATX12V/EP12V

***I'm willing to change the video card, but like i said i don't know which would be better, to crossfire or have them run independently.

I don't really understand your question. If you don't crossfire them why would you buy a second? They won't be able to work together. As for the build get a different psu and gpu. The 280x is cheaper than the 7970 ghz, but basically the same thing. Gt a decent brand psu: Corsair, Seasonic, XFX, etc.

I think what he is asking is if he should go with a dual gpu card like a 7990 or go with 2 7970's. 2 7970's will easily beat a 7990 as the 7990's run hot and will not overclock to near the extent of 2 7970's i say go the 2 7970 route

Ok so if I go with the dual crossfired GPU route what are my options for setting up a 3 monitor display? I've done dual before on many occasions, but I know 3 and up is different.

When you say 280x your talking going Nividia rather AMD correct? Originally I was thinking 750 corsair for my PSU. Should I bump it up to the 850 or will 750 be enough?
