I am planning on upgrading my build, I have decided to move away from my old AMD Phenom II X4 810 and use a Intel i5 Intel Core i5 4670K with a Gigabyte Z87X-D3H motherboard

I currently have one Radeon HD 6850. looking at the current prices of 6850's Is it worth me getting another 6850 in crossfire or should I use a single GTX 660 or 670 and then sli that in the future when its time to upgrade?

With the current prices of HD6850 ($150+) I would go with a single GPU. 2 x HD6850 is around the performance of a single HD7950 (around $200) or GTX760 ($250) and you would still be stuck with 1GB Vram vs the higher ram on the more powerful cards.
The Old card can be sold on places like Ebay or Craigslist.

Even if you can find a cheap used 6850, I would still hesitate to recommend Crossfire. Crossfire has stuttering issues, and these are known to be particularly severe for older cards like the 6850. You're also stuck on only 1 GB memory.

IMO you should sell the 6850 and buy a faster single card from the current generation.
