I have a Gateway LX-6810-01, the Stock Video Card, an nVidia GT120 is Notorious for Overheating, and mine is indeed running at or above the 105C Limit. I have looked at a GT 630 as a replacement, but their are so many brands and configurations, any suggestions on which brand and/or configuration is best?

According to the spec sheet for you computer on newegg, you have a 400W power supply.

With that in mind, the GT 630 or a Radeon HD 6670 would be compatible with your system. I think the HD 6670 would be a better buy. With either I would look for something with GDDR5 memory instead of GDDR3.

Example:
http://www.newegg.com/Product/Product.aspx?Item=N82E16814121442 -- $79.99US

Also, if you were to upgrade the power supply, you could get a better graphics cards, but that all depends on budget.
