I prefer Intel over AMD processors like an 4670K, 3570K something like that. AMD is good for the price. Also Win7>Win8 trust me
Again I like Nvidia over AMD so GTX 780 or 770

TBH your fine with that setup...cept Win 8... Don't do it

the GS series comes just right after the CX series and before the TX series. If you're going as high as 800+ I would you might as well get a gold certified one for just a little bit more money. The Seasonic X series and Corsair HX series is what I recommend.
