I'm am thinking about doing a custom water cooling pc for my next build but I really don't want to worry about have to clean it out every few months and draining it and re filling it? So do you really have to do maintenece for it? If so is it difficult? Or is there other ways?

What you do with the loop will determine how often you will have to clean it.
If you run dyes or coloured coolant, expect to be cleaning it every few months and replacing tubing and coolant. Run plain distilled water and Killcoil/Biocide, you wont need any more maintenance than dusting the rad and and replacing the water every 6 months.
