You can buy a good one on amazon like a VGA cooler from ARTIC to be more specific THE TWIN TURBO or ARTIC ACCLERO or ARTIC ACCLERO HYBRID

I plan to get either a 780 or a 770. How can I cool them externally, I.E without taking them apart (or is this not possible?)

For external cooling you'd either have to take the current cooler off to add a fan-type cooler, disassemble it to add a waterblock, or add fans to your case to create better airflow and cooler internals.

I don't particularly want to get an on GPU cooling solution (i.e. stock). How do I get better airflow?

Keep your case dust free, good cable management, have fans that take warm air toward a fan that expels warm air (like a fan air cycle), things such as this. There are videos/tutorials around the web.
