Basically I'm wondering if there's a point to a 1080(vert) 21x9 vs 16x9 besides seeing some more on the sides

Right now I have a 1050 (16x10) and a 1080 (16x9) and I didn't notice a difference besides less 'peripheral' vision

that is pretty much the whole point of extra wide monitors, wider POV

edit should be FOV, not pov :p

My question is: Does the quality change? I don't see anything looking better/worse

no, only the field of view changes when the aspect ratio changes, it has nothing to do with any eyecandy setting like AA or AF or textures etc

I keep saying quality <_< but I mean such as the difference of 720p vs 1080p quality not the actual 'quality settings'

lower resolution will look blurry or pixelated on a big screen when you can see the individual pixels of the image more readily than from a higher resolution image. And because there is more screen estate at higher res more stuff can be fit into it, some games make good use of it while others just make everything look bigger...
720p and 1080p have the same aspect ratio though so FOV should be the same for both...
