7850 crossfire or single 7950

want to check wich setup will give me the best performance (i think its the 7850 arrangement) but is it?

yep, the 7850's will be quite a bit more power in total, though actual performance gains vary from game to game with crossfire.

i have 2 hd7850 2gb, will the graphics memory will be 4gb?,or will it stay 2gb but with better performance?

the vram doesn't stack, you'll have 2 2GB cards taking turns rendering frames, not the same as having 4GB of vram, it should be plenty though for most things.

crossfire currently only works well for select dx11 titles through a beta driver. dx9 titles will likely experience stuttering, and some titles dont support crossfire, or perform poorly/crash with crossfire enabled. When its working properly, the 7850's crossfire will give better performance. but i would not go there, been there done that with crossfire 6850's, performance is unreliable. I would take the 7950 without a second thought.
