What Processor And Graphics Card Do I Need

Hi everyone, I'm planning on building a PC for my minecraft youtube videos and I pretty much have all the skills required for this...But I'm just not sure what Graphics Card/Processor I'm going to use-Keep in mind that I'm going to be using fraps to record and I'll be using Sonic Eathers Unbelievable Shaders as well, and I'll also have Skype open a the same time because my friend will be in the videos, Money is not a huge issue for me by the way.
I'm thinking about either using a:

5.0GHz AMD FX-9590 8-Core CPU with a XFX AMD Radeon HD 7970 3GB Graphics Card or an

Intel Core i7 4770K 4-Core Haswell CPU @ 4.4GHz. with Nvidia GeForce GTX 780 3GB

I'm aiming to get over at least 90-100 FPS with high settings so I need to know quick-And yes I'll have Optifine installed on my minecraft. My real question is if it is worth the money buying the Intel Processor and Nvidia Graphics or will the AMD processor and XFX Graphics give me the performance I need without Lag
Also if you wanted to know then just to tell you that my RAM is 16GB of 2133mhz

The 4770K, much more powerful, (it outperforms the 9590 while still at stock and generally can OC to at least 4.5) and the 780 is far superior to the 7970, though may want to look at the Asus 290X, which is right there with the 780 and cost less

i7 4770k. TDP is way too high on the 9590 so you'd have to buy a cooling kit, a bigger PSU, which will make it a lot more expensive than it has too. Which will probably make you broke since the TDP is so high, so will your energy bills if you get the 9590.

If you already have a beast rig then you might want to wait for Steamroller.

If you plan on gaming and recording while you're at it, then AMD is the way to go. AMD is better at streaming, if I recall.

Wait for steamroller or i7.
Or even broadwell for that matter but that'd be way too long a wait.

Lagging is a graphics card issue, more than a cpu issue. In general, the nvidia cards have less lagging.
I would opt for the 4770K and GTX780 superclocked graphics. A GTX780ti is supposed to be coming soon.
I think the r9-290X is too new with immature drivers, and the Titan is not significantly stronger than a Good GTX780.

I think 90-100fps is unrealistic.
Most monitors refresh at 60hz.

Dual graphics gpu's are an option, but that generally aggravates any lagging issues.
I would only go dual gpu if I were triple monitor gaming or using a 4k monitor.

Why exactly is 90-100FPS unrealistic?
 
More correctly, a single card at high settings will have difficulty doing 100fps.
It is not a cpu limitation, but a graphics card limitation.
Yes, there are some games that you might get that on, or by using a lower resolution that 1080P.
But, what is the point? Many games limit the fps to 60. and you would be hard pressed to see any difference past 85hz. And many monitors refresh at 60 hz anyway.
