Windows hangs (no BSD), then resumes normal operation, then hangs, and so on.

I have a issue with my system. Everything except the PSU is a year old. It's a ASUS P9X79 Deluxe with a i7-3930k processor. Also I have a Aspire Warlock 900 Watt PSU (4-5 yrs), and a non-GHZ Radeon 7970 GPU. And for RAM I use 4 X 4GB Kingston Hyper X 2133. I've had my system for a year now. And this is what happens. After booting windows (7, 8.1) my system hangs with no disk activity, but my mouse still works with no response to any mouse clicks. After 5 - 20 minutes, It'll resume normal operation. But then it'll repeat this again. Here is what I have eliminated so far. Before I had a SSD, now I am using a RAID setup, and it still does this on both setup's. I have tried using different SATA transfer and power cables. I also tried turning on safe mode, and this still happens. I have run S&M stress test, Memtest v.20, Prime, I have also eliminated thats its not a RAM issue and not a HDD issue as I have swapped older parts. So it;s either a VGA issue, Mobo, Cpu, or a bigger chance its a PSU since its a little old. To sum it all up, I have a issue with my system freezing up. Please help.

I've been monitoring OCCT and my PC hung while the TMPIN3 jumped to (MAX) temperature. Way above 120 degrees. Hmmm This sensor is supposedly a dead sensor, so why did my machine just freeze like.

The thing about sensor is that in some bios, if the temperature reaches any temp higher than say 100c, it will freeze the pc to prevent any damage to the system. Is there any way you can disable the sensor in your bios?

Whatever is causing my system to freeze like that is caused by the MSI Radeon HD 7970. With no catalyst drivers installed my system works fine. Right during the driver installation it'll freeze. I tried official drivers and beta too. No luck.

Everything is up to date. Drivers, Mobo BIOS, Windows 8.1 (previously Windows 7, and that froze too).
I think I'm going to replace my Motherboard. I think I have a slowly dying or faulty mobo since I have so many issues with it. I cant pinpoint the problem directly, because when I come up with a theory, it's always wrong. One last question. Can you guys suggest any BIOS settings for a NON OC'ed Intel core i7-3930k with 16GB of RAM running at 2133.
