I'm looking for the average wattage of a high-end gaming rig minus any video cards:

My rig currently: (minus v.cards)
H60 cooler, i5 3570k stock clock, asus xonar dsx, 2 4 gig dims DDR3 Gskill Sniper, 2 Muskin 120 SSDs, 3x200mm case fans, 2x120 fans on the H60, mobo is Gigabyte GA-Z77X-UD5H LGA 1155.

As you have to know that before adding each video card's wattage into the equation right? Like 700+700+total system wattage minus the video card(s)?

Just use this. It includes the entire system and leaves headroom for overclocking.

Just make sure you buy a quality unit. Corsair, Seasonic, PC Power and Cooling, XFX, Silverstone, Enermax, OCZ and the higher efficiency Rosewill units.

If you have no graphics card on a typical gaming rig, a 350W PSU would be fine. One card, 550W. Two cards the get a 750W.
You could calculate it manually, but unless you are doing something very atypical then that above rule of thumb will work fine.
