Now that prices came down, I'm considering the EVGA 780 but it only has 3Gb of Vram compared to the 4Gb on the 770 I was considering before. Would 3Gb be enough to run games close to or maxed out on 5760x1080?
Exactly yes 3GB would be enough.You can use TXAA and even 2x MSAA but i would suggest to use TXAA and turn Off MSAA as you're playing on such a big resolution so more pixels = less jagged egdes.

yes it is but turn AA Off and you're good to go.
I'm not going to max it out but I would still like to use FXAA, TXAA, or maybe even 4x MXAA so that my games look good.
