Ok, I have a laptop which currently has a measly 250GB HD. I have purchased a 1TB and a copy of Windows 8.1 full version. You can probably imagine I want to install the harddrive and then install windows 8.1. All I want to back up are documents, music, photos, not to fussed about software as I have time to reinstall if needed. I have a few questions as I'm not the most tech savvy guy.
One: Do I partition the hard drive before putting it into the laptop and installing windows, or will it give me that option if i just put the hard drive in and turn the laptop on?
Two: If i have do partition before putting it in, how do i go about that?
Three: How much would you recommend partitioning for windows 8.1?
Four: Is it as simple as putting the new hard drive in and putting the installation disc in, then turning the laptop on?
Five: I was told SSD is a pretty good alternative, but would it be better to use a 1TB HDD or 250GB SSD?

Any help would be greatly appreciated!!

Number 4. Put the hard drive in, put the disk in, and turn it on. It will give you the opportunity to partition the drive as you want. Initially only create a partition for Win 8. After Windows is loaded, go back to disk management and create any additional partitions.

Thank you my good man. Sounds simple enough! One more thing if you know. Backed up needed files to an external HDD except software. How would I go about transferring my Office 2013 and Norton 360? Just the kind of software the required product keys on installation.

You will have to load the Office and Norton programs from scratch after windows is installed. The product keys for both should work. Although microsoft is getting to be a stickler about reloading it's software. You might have to contact microsoft if your product key does not work. Just tell them that you upgraded the OS and they will work with you.
