The estimator on partpicker is very basic. It doesn't account for OC or any external devices. Personally I would still get the 1000w PSU because you want it to be running at 80% load (or around there) for the best efficiency (varies for some models). So if you come out to around 800w after OC, then you'll be right at 80%, instead of 95% load.
