After much deliberation I've come up with the build below. Now I'm just looking for your feedback...
Is there anywhere I could increase my quality or performance without going over budget?
Anywhere I can save money without affecting quality or performance?
Is this PSU good for i5-3570k oc, sli GTX 780, multiple SSDs/HDDs, etc.?
Anything I'm forgetting or overlooking?

Thank you for your response. I think I've adopted the i5-4670k for now, and I'm definitely looking at the PH-TC12DX and the OEM version of Windows 7. Early indications are that the UD3H will at least be in the running, but I'll have to look into Z78 mobos some.

If you don't mind, I'd like to know why you would go with G.Skill Sniper, Corsair 750D, and Rosewill 800W PSU over my original choices.

 
I did just look good parts and good price.
Gskill is good memory and it do not matter what name it do have.
UD3H is great mobo for OC and it do have lots sata ports and great quality for that price. It is high end mobo. Good protection too.
Corsair was good price and it is good case with good airflow. And it looks good too. What more can u wish for case?
Rosewill is great psu. Really good quality good efficiency and it cheaper than expensive corsair or seasonic. It do have leds but you can put them out if you do not like them. 5 year warranty is good.
Same psu 1300w did get great review from jonnyguru.

I did not find any better parts. Sure you can buy if u like samsung pro SSD but this is cheap and sure it is fast enough.

All was IMO best parts for price.
