2 760s would beat a 780 at a lower cost. Getting a 780/780ti in the future and going sli with that would put you in a stronger more future proof position. So it equals down to 2 things
1. Do you want to sli and get the 780+ performance now
2.Do you want to get the 780/780ti and sli later which will get you higher then a 690/7990 performance
3. waiting untill maxwell comes out which could be another option if you dont wanna deal with the 700 series all together just a thought
I would suggest getting another 760 FTW just because you save alot of money and you will get somewhat the same performance that a 780 would now give you. just my opinion.

Yes they both work together as long as they both 760s and 2GB on both cards..Make sure you get a mobo that supports x8/x8 nvidia sli,A case with good airflow i recommend full towers and a solid 750w power supply if those is in check your good to go
