How do I change printer settings to default to black and white only?

In previous versions of windows, I was able to customize the printer settings so that it always printed in grayscale, unless specifically changed at the time of the print job. I see how to access the control panel and can navigate to Customize Your Printer under Printer Management, but the option to change the default printer settings to grayscale or black and white is nowhere to be found?
Please help, I am beyond frustrated at this point and my children are killing me with the ink usage.
Printer is an Epson Stylus NX420.
 
new printer now use there own printer spool and drivers. there should be on the lower right of your pc a epson printer control panel. if you open that you can set your printer color uses there or go into printer in control panel then right click on the printer and bring up option. print in black and white only.

press start and type in "print", select "settings" from the right hand side of the screen, you will then see the option to select "devices and printers", open it. now, right click your printer and select "printer properties". from there you should see a tab at the top that says "advanced". select this and there will be an option to set your printing defaults. hope this helps!
