On the graphics card: Performance differences between those cards won't be great, and you may be able to overclock any of them anyway, so the only notable differences are cooler performance/noise and physical size. I have a Gigabyte HD7970 with that WF3 cooler on it. Even bitmining, which ran it at 98%, the fan never became obnoxious. It's a big card though, so make sure your case will hold it. An ATX case shouldn't be a problem. I need to remove the center cage in a microATX Fractal Design Define Mini to install it.
On the mobo, I have a MSI Z77-GD65 Gaming board, and it is sweet. If the Z87 variant is similar, you'll like that one.
On the memory, it looks good, but might be a little pricey. It also isn't low-profile, so make sure it will fit with your intended cooler. A gaming system doesn't really need more than 8GB, so you might get a 2x4GB kit if you want to save some money.
