21:9 Monitor VS. Triple Monitors

As for which is better for gaming, not all games have native support for 21:9 aspect ratio. You can use third-party tools or start messing with configuration files to get around the problem but it may not work for all games and you may end up with other problems like distorted FOV. For this reason, if you had to choose strictly between triple monitor and 21:9 I would go with triple monitor (assuming you could afford the right components to get decent FPS at that resolution).
That really depends on the resolution of the 21x9 monitor. If they are both about the same pixel count the GPU load will be comparable, the overhead from the multiple monitor set up shouldn't enough to make a notable difference.

The 21:9 screens i was finding are 2560:1080 which isn't very high resolution, only about 33% more pixels than a standard 1920x1080 screen, if this is what you are comparing to a 3 screen setup, it would require far less graphics power as the three screen setup would have 2.25x as many pixels.

As for which would be better for gaming, that is really up to personal preference and which monitors you are looking to use for your triple screen setup, skinny borders are recommended.

would a single gtx 760 2gb be ok for triple monitors? (5760x1080) Would i be able to run, for example, crysis 3 at medium settings 30-50 fps?

No, for that you will have to go with the ultrawide monitor, it's less distracting, ad it's my personal preference. I'm sorry to break it to you man, but a single gtx 760 will only be enough to run crysis 3 ok at a 1080p display. I think for any single graphics card you select, you should go with the ultrawide, because some graphics cards do't have enough outputs for a three monitor setup. Cheers!

You're wrong on that, I had a Gigabyte 760 2G and ran crysis 3 perfectly fine on medium with triple monitors.
I had a 2500 i5 and 8GB of Corsair Vengeance ram
