So right now, I have a fx 6300, and 7870 ghz OC, along with a 550w PSU. Should i get another 7870 and crossfire, or buy a single 7950? Note: If i crossfire, I would have to get a new PSU to handle them both.

Yeah you won't gain much from upgrading to the 7950, and crossfiring and a new psu would cost quite bit so with that money you can probably buy a better card than the 7950

Would a 7970 bottleneck my CPU, or vice versa?
HD 7870 Crossfire would give you more FPS than a HD 7970. (10+)
An XFX 550W (what im assuming you have) will run 2 HD 7870s fine assuming you have no plans to overclock the gpus.. You just need molex adapters.
Use two 7870s in CF. Be happy. You may experience some bottleneck from your CPU in some cases but that's the way it goes. You can lessen that of course by overclocking your CPU. If you choose not to overclock anything though you may get by on your current PSU just fine.
