Two 780 TI's in SLI is a fairly pointless idea at this point. At that resolution it's entirely unneeded.
Also it depends on what you'll be playing as to whether that CPU will create a bottleneck or not.
It doesn't appear that way from benchmarks I have seen. a single 780Ti on BF4 for example at my resolution on ultra settings does dip down into the 30-40 fps range at times. I try to keep everything above 60 whenever possible. Plus, this is today. The titles out in the next year or so will only get more demanding.
You can never have too much graphics horsepower in my opinion. Cost is an issue for sure, but I budget in at least a few K for PC upgrades every year or so. The Ti's are a bargain in my opinion since I was a few weeks ago considering 2 Titans which would have cost significantly more and offered less performance in games.
What kind of games might create a CPU bottleneck?
Generally speaking though in games optimized for GPU's I should not see a bottleneck though?
