Trying to set my fan speeds manually in the bios so that when certain temps are reached the fan will react how I want it to. When I go to manual settings I get these options: 0.75 PWM value/*C all the way to 2.50/*C. Now I get what this option is supposed to do but I feel I may be somehow(stupidly) missing something. It doesn't say the degree at which it'll reach to achieve the faster rpm. It just says celsius. And I could be wrong but is the pwm value the extra voltage it needs to achieve these speeds at certain temps? How do I set it so at let's say 60C it runs at 75% and anything higher than 60C set too 100%??

It's a relative PWM value. Motherboard on automatic mode has a certain fan slope built-in. This means, it is programmed on how much to change the PWM pulse width after temperature rises by 1 degree Celsius. By changing it to manual you can alter this value between 75% and 250% of nominal value, effectively controlling how fast fans will accelerate when temperature rises. This however, doesn't allow you to create fully customized fan slope relative to CPU temperature.

To do so, you have to use Gigabytes Easy Tune software in Windows. There you can set it exactly as you want.

Btw. PWM is not changing the fan voltage. In simple words it provides control signal, so the fan knows how fast to spin.

Thanks for the quick reply! Explained a lot. I have gone into the EZTune program to set up fans 2&3 but even when setting to normal, which is supposed to allow control of those fans, it doesn't show me the option to. At one point I had all the options to control cpu/opt fan, fan1, and fan 2 & 3. I have cpu/opt fan on full speed(Noctua NHD14) and the rear exhaust is on full speed(AF quiet 140) all through bios though. Wondering why it won't show me 2&3 through EZTune :-/
