Sub $1200 System

The title basically says it all - I need your help designing a system that is around $1200, hopefully less. Here is the catch - I need it to be able to run surround or crossfire. It will be for primarily gaming and productivity (reason for the 3 monitors). Here is a system I plan on buying - I just don't know how well it will run a 5760 x 1080 resolution.

Can save on CPU cooler and system case (go hYper 212 Evo $35 and the HAF 912 case $60 that's plus $95) but if thinking SLI in near future will need a bigger PSU, prob an 850, so will be a little close to $1200

I wanted this cooler and case in specific. Kinda just a personal preference thing. I like the design. The Phanteks preforms pretty amazing from what I have heard. I might consider swapping that out for a H100i from Corsair. I wanted water-cooling from the start but felt with the GTX 780 it was a tad bit out of reach.

Well, you've got a good rig planned, don't see a lot of wiggle room to cut it down to $1200

Do you think that system could handle Nvidia Surround at 5760x1080? Honestly, my biggest problem is should I spend $500 and get a 760 SC SLI, which means if I want to upgrade I will have to remove both cards, or should I stick with a GTX 780 and SLI in the future?
