with the Pro version the three main differences are:
1) a system running Pro you can join a Domain
2) Pro comes with Bitlocker which allows you to encrypt your drive(s)
3) if the system is running PRO, you can Remote Desktop into that computer

No, RDP is not supported in either direction.
With 8.1 you can RDP into a 8.1 pro system. 8.1 can act as the client. 8.1 pro can act as the client and the host. I'm not sure about going from client 8.1 into a win 7 pro host.
