You will need a 4GB GFX card.. Skyrim's mods take up a lot of power.
First of all, do you really need that kind of graphics power? Only makes sense with a 2560X1440/1600 display. With a 1920X1200/1080 display two GTX 770's would be plenty. If you are going triple displays, I'd recommend 4GB of VRAM. If you can wait, get R9 290 cards with 4GB of VRAM and only cost $400 each. Once the custom cooler versions are out, they will be as fast as the 780's

If you need something now, I'd recommend those 4GB GTX 770. If you can wait a few weeks, the R9 290's, once they come out with custom coolers, will be the bomb, as fast as the GTx 780, 4GB RAM, and a paltry $400 each. If you can handle the slight fan noise, two R9 290's wouldn't be so bad now.

To be honest I have until Next week to decide on my build.
I just need something now that I can play Nvidia Surround Ultra Skyrim on with a shit load of ENB's and MODS while streaming and recording the gameplay. I figure if my pc can do all of that then I will be pretty good off.
 
With triple displays and lots of add mods, you are going to need 4GB. Nvidia has a hardware solution for recording so you really need the GTX 770 4GB. Perhaps you should stretch for eventually going triple SLI. Get two now and a third GTX 770 4GB later. Get a 1000W supply and a better motherboard, like a ASRock Extreme 6 Z87.
