Ok just to make sure I understand you correctly. What do you want to copy onto a disc? The copy of installed windows on your c drive?

Yes when creating a system image you are essentially creating a copy of your C drive in whatever state it is in upon the creation of the system image. It will back up windows 7 and any other files contained on that drive so that the C drive can be completely reconstructed if needed.
