Well I have played Gothic 1-3 games (my favourite RPG games), Dragon Age Origins and II,TES III and IV (I also tried Skyrim but I found the quests quite boring, also the "allmighty" dragons aren't allmighty like they are supposed to be, but they are just common creatures... Gave it a few hours and dropped it, in my opinion it is worse than previous TES games), I have started a bit of Kingdoms of Amalur, have tried Witcher but found its combat terrible, Fable TLC (was a nice game in my opinion), Fallout 3 also good. I don't like games like Titan Quest or Diablo because of the bird's perspective. I prefer 3rd or 1st person RPGs which have a good amount of roleplaying and which have a good story. Can you recommend me some?

Personally I liked Fallout: New Vegas more than Fallout 3. Also you mentioned Witcher not Witcher 2 which is , for me atleast , a very decent game. Also try Dark souls , a very difficult but amuzing game ( if you remove some occasional ragequits :p ).
What else ... consider the Mass Effect series.
And if you want to try some classic legends you can go Baldur's Gate series or Neverwinter Nights series , but the perspective is kinda 'birdish' as you said. But these games have so many things to do and consider that they make the new RPG games look like children toys!

For me hands down my favorite RPGs are Star wars Knights Of The Old Republic I and II
Great story and characters that will really bring you into this universe. Graphics are a bit aging however do not do yourself a dissatisfaction of not playing this game for that reason.

If you are willing to play some older games, but still within reason. Try Neverwinter Nights 1 & 2 and all their expansions. You may find 1 to be too dated on graphics, but NWN 2 and all the expansions are not bad. They have tons of reply value due to all the character combinations at your disposal.

As far as Skyrim goes, remember that you are the Dragonborn. A natural born Dragon Slayer. It is only fitting that you can kill Dragons reasonably well. Play on Master or Legendary difficulty, and they should remain difficult for 40-50 levels. Especially for a melee based character. A little restraint can also make the game a lot more interesting, such as not doing enchanting. This results in making the drops a lot more interesting.

Dark souls prepare to die edition is probably the best RPG I've played in 27 years of gaming. There isn't much of a story, but it's a very interesting and challenging game with a huge open world and lots of different enemies in a dark hostile environment. I liked that game so much that I would spend 12 hours or more straight playing it every weekend.
