Will my PSU run a GTX 780 TI?

Yes, that's a quality 700 watt unit; much more power than you need.

Here's Guru3d's power recommendation for the GTX 780 Ti:

•GeForce GTX 780 Ti - On your average system the card requires you to have a 550 Watt power supply unit.
•GeForce GTX 780 Ti 2-way SLI - On your average system the cards require you to have a 800 Watt power supply unit as minimum.
•GeForce GTX 780 Ti 3-way SLI - On your average system the cards require you to have a 1200 Watt power supply unit as minimum.

If you are going to overclock your GPU or processor, then we do recommend you purchase something with some more stamina.

So, GTX 780 TI 2-way SLI but they are ACX SUPERCLOCKED models by EVGA, they would likely need something beefier than 850W PSU?

Absolutely not. 800 watts is recommended, so the extra 50 watts would be plenty. Guru3d is very conservative in their recommendation, meaning they overestimate when most people could get by with less. They like to be generous so that people aren't over-taxing their PSUs and have plenty of overhead for overclocking.
