What power supply should I use I have 2.

I have two power supplies a Rocketfish™ - 700-Watt ATX CPU Power Supply and a Thermaltake SMART M Series SP-850M 850W which should I use. I have a gtx 680 and and amd fx 4100 cpu.
Thermal take one is newer.

You should be fine with both .....
I`ll go for the 850 -> it will heat less on gaming than 700
And it`s new right :)

Rocketfish is Best Buy's house brand.
I would go with the Thermaltake, if it were my only other choice.

If forced to pick, I might guess to use the stronger on the basis that it will not be stressed as much.
