I have an AMD FX 6300, and I'm wondering if my CPU will bottleneck a Nvidia Geforce GTX 780

It will compared to an unlocked Intel I5 or I7, but how much really depends on resolution and how much you overclock.

I am not overclocking, and my resolution is 1980x1080

It will not bottleneck it although any intel fanboy will try to tell you it will. Any difference will be in the 3-5fps range.

Just look up FX-6300 benchmarks. In many cases it matches or beats the i7-2600k($300) in gaming performance.

That 3-5fps difference is a bottleneck compared to better CPU.
OP to get the most out of GTX780 I would suggest OC on the CPU. Here are BF4 CPU scores with a Titan at your res FX6300 would be somewhere in between the other FX http://www.tomshardware.com/reviews/battlefield-4-graph...
This one would place it on level with an I3 3220 http://www.techspot.com/review/734-battlefield-4-benchm...

If you intend to use a GTX780 with an FX-6300 it had better be at 1440p minimum. Otherwise I wouldn't bother, at 1080p something like a GTX760 would be more of a match to that CPU, seeing as it will be a major bottleneck to a GTX780 in CPU heavy games.
Overclocking will alleviate the bottleneck slightly, but I've had to move to 1440p to fully utilise my GTX780, and I'm running a 2500k @ 4.6Ghz.

I've decided on getting a GTX 770, how will that work out?

Pretty much the same except little easier for the FX6300 to keep up.
