I thought if you put a dollar sign after a windows share name, it would be hidden and not show up unless the share name is explicitely typed out. That seems to work for windows & mac, but the share still shows up when browsing the network on Linux (ubuntu 10.04 in my case)

Any way to make it truly hidden from Linux as well?

Try removing the "Everyone" entry from the Drive Properties \ Security Tab. To see the security tab: In Windows XP Pro Edition; you have to disable Simple file sharing and in Home Edition; you have to logon in Safe Mode. Read/See the full instructions in the links.
