I have a Radeon HD 7970 which has 2x mini display ports, 1 hdmi port and a DVI port.

I want to go 3x monitors. The Monitors are 2x VGA and the Ezio Foris FS233 with the following connections(half way down the page)

http://www.eizo.com/global/products/foris/fs2333/

Can someone please tell me exactly what I need to make this happen?

I run 4 monitor from my 7950. The best way for ou to go is using all digital connections (no VGA). Based on your monitors I would go.

1x HDMI
1x DVI to HDMI (DVI to HDMI cable)
1x Mini Displayport adapter (converts to DVI) then from here a DVI to HDMI cable.

Be sure to get a descent displayport adapter, preferably one specifically listed as being EyeFinity Compatible.

So there is no way of doing this without all 3 monitors accepting HDMI connections?

Re-read what I wrote more carefully. All of your monitors would be using HDMI, you just have to use the correct adapters and cables, but all of them will be HDMI in the end.
