When installing Windows or Ubuntu I put the disk in my disk tray and in my BIOS I go to click to boot from the disk drive but there are two options. One is just the Disk Drive and the other is the Disk Drive with EUFI above it. I have an AUS P8Z77 MOBO. Which one do I pick?

Just the "Disk Drive" will be fine.

What would be the difference if I booted from the Disk Drive that said EUFI above it?

What? I just know I hit UEFI and now there's all these new partitions so I was going to reinstall because I don't know which is better.

Efi and Uefi are the new replacement for the old Bios we are all used to. Installing an OS is slightly different for the new interface. Since this is a new installation for you then the only condition thar requires UEFI is if your boot drive is greater than 2Tb. If its not then its up to you but if your first OS is in the old bios way then so must the other OS's if you plan on dual/triple booting.
