64GB RAM capable system for VMware lab

I need to lab more at home, so I am looking into building a Windows 8 system running VMware workstation. Under workstation I will be running ESXi, vCenter, NFS Storage, and router VMs to create complex lab scenarios.
I need 64GB of ram.

My other option is to run ESXi on the system, with many nested ESXi underneath. I would need to run one windows system to function as an iTunes server for the apple TV. I would have to play around with the VMware HCL for this option.

Taking a look around it seems like the X79 LGA 2011 chipset is the only affordable way to get 64GB of ram. Want to make sure this is my best option?

I am looking at :
MB: Asus P9X79 PRO
CPU : Intel Core i7-3820
Memory : Corsair Vengeance 64 GB (8 x 8 GB) DDR3 1866 MHz (PC3 15000)

I may get a 4x8GB set now, and another after christmas.

Any huge mistakes here? I haven't built or owned a desktop in about 10 years.

The MB supports an Asus SSD cache tier, anyone have experience with this? I could use the SSD cache and put the OS and files on one raid 5, or I could put the OS on SSD and everything else on raid 5 or raid 10.
I would need to get a budget graphics card, but just the cheapest since I would end up running this headless.
 
The X79 platform is indeed the only consumer platform that can have 64GiB of DDR3 installed.

There are LGA1155/1150 motherboards which support 64GiB of DDR3 but this requires the use of unbuffered 16GiB DDR3 modules that haven't been released to market.
