You need a GPU with more VRAM. 2 monitors at 1080 will be fine with 2GB, 3-4 monitors you should have between 3-4GB

Are you gaming on those other screens? If not, than you really wont need to change anything. But if you plan on gaming on more than one screen you may need a better GPU.

Yes, you are rendering three times the number of pixels as normal. I recommend a single 7970 if thats all you can afford but to be able to turn graphics up and have a playable frame rate try 7970 crossfire, R9 290, 290x, 780, 780ti etc...

You will of course want your other components to not be a slouch but the main component for multiple screens will be a good graphics card setup.
