4GB is considered the minimum for medium gaming, but the graphics cards don't "need" the System RAM to be a particular size.

You should have 64-bit Windows however or you'll have problems with insufficient System RAM. 32-bit Windows can only address 4GB which includes ALL memory. So if you had 32-bit Windows with 2x1GB cards you'd have LESS than 2GB of that physical 4GB of System RAM usable by Windows (about 1.8GB).

will i be ok on 64 bit windows 7 + gaming?

 
Skyrim uses up to 1.75GB of System RAM in my tests and it probably uses more than most.

I've seen benchmarks for a few games that show better performance with more than 4GB but overall very few games need more. It would be a good idea to close any browser windows and any programs that may be using a lot of RAM while gaming.

Don't use memory management programs. Windows does a great job of this for you. Although you might observe 3GB of your 4GB being used before starting a game, if your game requires more than 1GB it will buffer data to your Pagefile on your main HDD or SSD to free up space automatically.
