So i just got 2 500gb Hdd's and i want to raid in raid0 for some extra speed but, im booting windows 7 from another hard drive thats not in the array, and i'm not sure if im doing something wrong, or if this just isnt possible, i can get the 2 to raid together but when i do that, my motherboard reads my 1tb HDD as being in raid also when its not, which makes booting up impossible, so i have to switch back to AHCI so i can boot and when i go to check all my storage devices it only shows me 2 hardrives, 1 bring the 1Tb and the other being just one of the 500gb drives, any advice?, or do i have to boot up from the raid array?

1) Is windows 7 Installed on one of the 500GB? If so it will be erased. When you create a raid it erases everything on the hard drives.
2) So you also have a 1Tb on top of the 500GB hard drives correct?
3) You don't set Raid in the BIOS. When the PC starts up there will be an option like CTRL+I or H or something like that to get into the Raid menu. From there you can make the raid and reinstall windows.

It sounds like you have all the drives on the same controller. Your boot drive would need to be on a seperate controller if you don't want it to run in RAID mode. If your motherboard has multiple drive controllers, hook the two 500g drive onto the other controller.
if you're trying to boot from RAID, you will need to reinstall your OS as you generally create the RAID volume then install the OS onto it.
