Will my GPU be able to run dual monitors only using 1 for gaming?

Basically, what I'm wanting, is at some point run dual monitors using the monitor provided in the link, only one would be for gaming the other for youtube watching/editing/programming. Also, eventually could I upgrade to a triple monitor?

Yes, more than enough.

As a matter of fact, your spec is good enough for 3 monitors for gaming though it will reduce the quality of the game if you use Nvidia Surround.

Usually, if you want to game with 3 monitors, you want a video card with at least 3GB, which is why many people CrossFire or SLI to get more ram in the video card. There are high-end card like R9 280X that provides 3GB, but it really comes down to what game you play. If you play games like Bioshock Inifinite and other AAA games, then I recommend getting a 3GB card if you want to game with 3 monitors.

Personally, 3 monitors doesn't really benefit much, because other than gaming, you don't use your 3rd monitor much

As I said, I plan on only using 1 for gaming as of this time, the other monitor for watching youtube / web browsing while playing on the gaming monitor, then the 3rd if I get it will be for programming.
