So, I planned to get a new CPU cooler and a R9 280x - But so far, I've only bought the cooler: Noctua NH-L12 - and I'm currently running Prime95, and my CPU is sitting at 54-55 celsius.

How far would you recon I could overclock it? I've had it clocked to 3.8Ghz with the stock cooler (which was garbage and very noisy) and had it running with no problems/crashes.

What would be the ideal temperature to hit as a max? 60-70?

750W unknown manufacturer
Gigabyte GA-770TA-UD3
6Gb 1330Ghz ram
Radeon HD 5850

below 60'c is recommended temperature for phenom II class.

well, usually phenom II architecture will hit a huge brick wall at 4.2 Ghz.
you may try to touch this limit.
but remember, under 1.55v, or under 1.5 for 24/7

well, your board have 8+2 vrm phase. but it's naked..
you have to add your own vrm cooler..
add something like this, (this one form enzo tech), and you'll be fine.

then, 750 watt psu "unknown" manufacturer is really scary..
get a better power supply, even 500 watt class real psu from known brand (for exp: seasonic, corsair, antec etc) is more than enough for your system..

I have never seen vrm phases and vrm coolers when searching for overclocking.. Is that necessary? I only plan on hitting 3.8Ghz, 4.0Ghz at max.

About the psu - wouldn't 750 (of any brand) be better than a 500w?

Keep in mind I'll be upgrading my gfx very soon :)

Generic psu means fake wattage label, unstable rail, high ripple and other problem.

read this article..generic "unknown manufacture" PSU test..:)
http://hardwareinsights.com/wp/the-el-cheapo-power-supp...

a generic 750 watt psu, will exploded when loaded with at most half wattage label..
Based on that fact, we can assume that your PSU capacity just around 350 watt.

so, 500 watt real psu is much better than any generic 750 watt psu, but only have 350 watt capacity..

500w is more than enough to handle any single graphics card..
a system powered with r9 280x, even in the overclocked mode, just consume less than 400w while full stressing with furmark..
