HELP!!! non techy mother looking for advice on which xbox to get.....I am getting a lot of "storage" concerns from sales people trying to upsell. I have a 7 year old who wants to play minecraft online with the xbox. The concern is that I will spend hundreds on something that will not grow with him but the bottom line is, he wants to play minecraft and I want to use the kinect to dance (ok, I said it out loud) PLEASE HELP!!! Which console will be better and can I buy a cheap hard drive to store if needed?

Minecraft does require a hard drive, since it's a downloadable game and does not come on DVD. Meaning you will have to download it within Xbox Live onto your hard drive.
The game itself does not require huge amount of space.
Also if you want the Kinect, then you're better of buying it as part of an Xbox bundle, and not separate, as it's cheaper this way.
My recommendation. Buy the 4GB XBox 360 Bundle that includes the Kinect, costs around $250. And if in the future you need to upgrade your hard drive. You can buy a 320GB hard drive for $70.
