Building a general use PC for my parents and they wont be doing anything memory intensive. The CPU and motherboard are as follows:

CPU: INTEL HASWELL CORE I5 4440 3.10GHZ 6MB LGA1150 $259.95

Motherboard: ASROCK B85M-HDS INTEL B85 MATX HASWELL LGA1150 $109.95

The MB has two channels up to 16Gb 1600 MHz and I was going to add in a 2x4Gb module but if it is not needed I can save myself $80 (NZ prices D: ). Is a single 4Gb module okay to use??

It will work just fine. Slightly slower than a 2x2GB or 2x4GB config, but not so anyone would notice.
