If you go to the Gigabyte website, it will have a list of all available BIOS updates, and what they fix, or what they were made for. If you are experiencing a problem, and there is a more recent BIOS update available that specifically was made to fix your problem, then yes, you should update the BIOS.
If you are not having any issues, you are best advised to just the BIOS alone.

Well, yes that will work, but It won't run at that speed, the max speed of the memory controller on that processor is 1866.
