How loud will this build be(estimate)?

the loudest part of this configuration would be the cooler on the video card under load:
you may consider to replace it with one of these:

http://uk.pcpartpicker.com/part/gigabyte-video-card-gvr928xoc3gd

i would also change the psu and motherboard: http://uk.pcpartpicker.com/part/gigabyte-motherboard-gaz87xd3h
it´s cheaper and has better quality VRM for overclocking your cpu...
for the power supply i would recommend: http://uk.pcpartpicker.com/part/xfx-power-supply-p1650snlb9

Oh, well I already bought the GPU and motherboard and I'm not particularly bothered about overclocking but I'll be sure to check out that power supply.
Will the GPU ever really be put under enough stress to go above 50% fan speed? I looked at a few reviews and at 50% it seemed not too loud.

Some graphics cards will definitely be louder than others, and its certainly worth flicking through reviews to see the comparisons (and how much they have in common with each other, as they are all tested in different ways).

If you are seriously concerned about the noise levels, then looking at cases specifically designed with this in mind is a good idea. It's pretty intuitive in that generally, anything that's full of holes+mesh for fans is probably not going to muffle much noise. If you do get your build up and running and it is louder than you would like, then you can always purchase silencing foam to try to help a little.

What else did you already buy?

I chose the next parts,
http://uk.pcpartpicker.com/p/2dk15
case according to a review i read shouldn't be to loud,
other ram which won't get in the way with any cooler.
different cooler which should be really silent.Other option considering what you said about overclocking,
http://uk.pcpartpicker.com/part/zalman-cpu-cooler-cnps10xoptima
other psu which should give the option for crossfire,if not either of the next would already do good,
http://uk.pcpartpicker.com/part/seasonic-power-supply-m12ii520bronze
http://uk.pcpartpicker.com/part/xfx-power-supply-p1550sxxb9
by now i would also go for windows 8.1.

Sorry about picking it as solution, I didn't mean to do that. I've bought everything but the ram, psu and windows. I think that seasonic 520w looks like the best option as i shouldn't need too much excess power and it's semi modular.

Ok thanks for the help. I didn't want this pc to be totally silent, just enough so it won't annoy my family(or me) :p
