which CPU do you have? Intel's X79 (LGA 2011), X59 (LGA 1366) chipsets use quad channel memory (ie, those that come in packages of 4x). The rest of intel's chipsets and all of amd's use dual channel. If you use quad channel memory on a dual channel chipset motherboard, the memory will default to dual channel and you will not see any benefit.

I agree. You won't see a performance difference between the two, but two sticks is not as hard on the controller and allows you an upgrade path. If you fill up all four slots right off the bat you will have to replace all the RAM if you ever want to go with more RAM in the future.
