Looking for some suggestions for CPU/mobo/chasis for my HTPC build.
Budget is $700ish.
Needs high quality audio output to stereo.
Also 1080P output for playing video from my NAS.
Onboard storage is not critical since all media is network attached.
Would like to also have it as an "always on" plex server able to handle audio/video transcoding.
Game playing would be welcome, but not critical.

Thanks!

I like your suggestions though I really have no use for the optical drive and the mobo you suggested seems to be missing HDMI out.
I was looking at something like this:

PCPartPicker part list: http://pcpartpicker.com/p/2faWk
Price breakdown by merchant: http://pcpartpicker.com/p/2faWk/by_merchant/
Benchmarks: http://pcpartpicker.com/p/2faWk/benchmarks/

CPU: AMD A10-6800K 4.1GHz Quad-Core Processor ($139.99 @ Newegg)
Motherboard: ASRock FM2A88M EXTREME4+ Micro ATX FM2+ Motherboard ($92.55 @ Newegg)
Memory: G.Skill Ripjaws Series 8GB (2 x 4GB) DDR3-1600 Memory ($49.99 @ Newegg)
Storage: Kingston HyperX 3K 120GB 2.5" Solid State Disk ($89.99 @ Amazon)
Case: Silverstone ML04B HTPC Case ($74.99 @ Newegg)
Power Supply: Corsair CX 430W 80+ Bronze Certified Semi-Modular ATX Power Supply ($34.99 @ Microcenter)
Operating System: Microsoft Windows 7 Home Premium SP1 (OEM) (64-bit) ($89.00 @ Amazon)
Total: $556.50

Do you think I really need something as beefy as the intel i5?

If you want it to last 5-7 years and use almost no power in standby, yes you need and i3/i5/i7.
As for HDMI it's on the suggested GPU (you don't use the motherboards ports when a GPU is plugged in.
You need the DVD drive to install windows.
